How does the fining process work?

Each fining agent possesses specific properties and interacts with various components of the wine based on its origin, charge density, molecular weight, and chemical characteristics.
The fining process involves two key reactions:
Flocculation: Intermolecular interactions—driven by charge, chemical bonding, and absorption or adsorption—that result in the formation of flocs.
Sedimentation: The resulting flocs are insoluble in the liquid and have a higher specific gravity than the wine or juice, causing them to settle out over time.
